WINTER SOLSTICE KALE SALAD — Boulder Nutrition

This festive salad makes a wonderful dish for your holiday table, and trust me, everyone in my family loves it, even if they are new to kale

Winter Solstice Kale Salad

Serves 4


THE GOODS:

For the salad:

1 head kale

2 Tbsp olive oil

1/2 lemon juiced

1 cup of marinated beats (I like Love Beats)

1/2 cup pomegranate seeds

1/4 cup green onion

1/2 cup pistachios 

For the tahini dressing:

1/2 tahini

1 clove garlic

1 lemon, juiced

1 Tbsp Tamari, Soy Sauce, or Coconut Aminos

!/2 cup of filtered water

THE METHOD:

Destem and rip kale into bite sized pieces. Drizzle with olive oil and lemon. Massage until coated and wilted. Add dressing ingredients into a jar, and shake until mixed well. Drizzle the tahini dressing atop the kale and toss until evenly coated. Top with marinated beets, green onion, pomegranate seeds, and pistachios. Toss and serve.
